Quesadillas de Birria – The Quesadillas de Birria contain shredded birria style beef, mozzarella, onion, and cilantro with a birria consomé dip. These are some of my favorite quesadillas I’ve ever had. The shredded birria beef is tender, juicy, and flavorful. The mozzarella is melty and smooth while the tortilla is perfectly crisp. The onions add a wonderful crunchy texture and their sharp flavor cuts through the rich meat and cheese. The fresh cilantro has a bright flavor that balances the richness as well. The best part is the consomé. The consomé is a broth-like liquid that the beef is cooked in. Birria consomé typically contains beef stock, chiles, adobo sauce, apple cider vinegar, spices, onion, tomato, and garlic. Cooking the meat in the consomé gives it its delicious flavor, and in turn the consomé develops more flavor as the meat cooks in it. If you haven’t guessed already, this consomé is so good you’ll want to drink it alone. You have to restrain yourself because the already delicious quesadillas are elevated to the next level when you dip them in the warm consomé. The consomé makes the cheese extra melty and immerses the quesadilla in its savory, subtly spicy goodness. Anyone who likes meat and cheese must try these quesadillas.
Chicken Torta – The Tortas include your choice of meat, mayonnaise, lettuce, tomatoes, cheese, refried beans, jalapenos, and avocado. I got the chicken torta. The chicken is shredded and lightly coated with a delicious, mild, peppery sauce. The sandwich is served on a fluffy, fresh bolillo roll. I say roll, but it’s so large it is more like a small loaf of bread (don’t worry it’s so delicious you won’t think twice about devouring the whole thing). This generously sized roll is piled with warm chicken, creamy mayonnaise, refreshing lettuce and tomatoes, melty cheese, refried beans, pickled jalapenos, and creamy avocado. Aside from the gorgeous bread, the beans, jalapeno, and avocado are what make the sandwich so delicious. The refried beans are salty, earthy, and rich. The pickled jalapeno adds a kick of spice and cuts through the salty, rich flavors of the chicken, cheese, and refried beans. The avocado is perfectly fresh and creamy, bringing together the whole sandwich. This is the first torta I’ve tried, and it was better than I ever dreamed of. A torta brings together your favorite taco ingredients and puts it on delicious bread! What could be better? Not much!
