Mango-Yuzu Chantilly Cake –  The Mango-Yuzu Chantilly cake is a spring/summer special at Whole Foods.  You can find pre-packaged slices in the refrigerated dessert section (in my experience it’s typically close to the entrance of the store).  The cake includes two layers of vanilla cake with yuzu curd in between, frosted with mango Chantilly cream.  The vanilla cake is incredibly moist with a delicious sweet, delicate vanilla flavor.  The mango Chantilly cream has genuine mango flavor and a rich, creamy texture.  The best part is the yuzu curd.  It has an incredible tart, sweet, subtly bitter yuzu flavor with a luxuriously smooth and velvety texture.  The bright yuzu curd cuts through the rich Chantilly cream while complimenting the light vanilla and tropical mango flavors.  I am often disappointed with yuzu desserts because the flavor is too subtle, but this curd is packed with yuzu flavor!  If there is a Whole Foods near you, go get it right now!  This is one of the most delicious slices of cake I’ve ever had.  The mango and yuzu flavor are just so spectacular, and the frosting, curd, and cake all have the most perfect and satisfying textures.
