From Roy is a bakery in Houston, Texas that specializes in panettone.  The first time I had From Roy panettone it was a partnership with the dessert café Lysée in NYC.  It was one of the most incredible baked goods I’ve ever eaten.  This time I ordered it directly, and it was just as delicious.  It is definitely expensive, but there is nowhere else you can get panettone like this except possibly in Italy.  Take one bite, and you won’t be thinking about the price.

Pistachio Cherry Panettone – The Pistachio Cherry Panettone is a pistachio flavored panettone with whole pistachios and amarena cherries speckled throughout, topped with Italian pearl sugar.  This panettone is a piece of culinary art.  As I cut each slice, the knife simply glides through the impeccable bread.  It has the gorgeous, airy holes inside that are a sign of incredible panettone made from beautiful sourdough.  It is so buttery and soft it melts in your mouth.   The nutty, sweet and savory pistachio flavor comes through while letting the unique panettone flavor shine through.  There is the perfect amount of pistachios and cherries so that you get some in every bite.  The pistachios add pure pistachio flavor and a crunch.  The cherries are juicy and soft with a delectable sweet, tart flavor that cuts through the rich, sweet bread.  The Italian pearl sugar on top adds a fun, crisp texture and a clean, pleasant sweetness.  Each component comes together to create a divine harmony of flavor and texture.  Roy Shvartzapel has truly mastered the art of making panettone, an incredibly difficult confection to bake.  It does not get better than this.  Each bite is a taste of true perfection.
