Water & Wheat is an Italian restaurant with various locations in NYC.  Their specialties are fresh pasta and woodfired flatbreads.  Everything is always fresh and flavorful!

Avocado Hummus Flatbread – The Avocado Hummus Flatbread includes avocado hummus, asparagus, marinated artichokes, bell peppers, lemon ricotta, and basil on a woodfired flatbread. The flatbread itself has a wonderful char that gives it excellent flavor.  It has a crispy exterior and tender interior.  The avocado hummus is nutty and earthy creating a light yet flavorful base for the veggies.  The asparagus is tender with a slight crunch with its earthy flavor while the bell peppers are subtly sweet and juicy.  The marinated artichokes add a bright, herby flavor that compliments the other toppings.  My favorite part is the lemon ricotta.  It is beautifully creamy and fresh.  The lemon adds a delicate flavor that blends wonderfully with the vegetables.  The basil adds a nice touch of Italian flavor.  This is a lovely, flavorful appetizer or meal.  There is the perfect balance of refreshing vegetables, warm bread, and creamy ricotta.  It simultaneously satisfies my cravings for veggies and hummus, and cheese and bread!

Spring Lemon Asparagus Pasta – The Spring Lemon Asparagus Pasta includes asparagus, shallots, broccolini, olives, parmesan, and basil lemon sauce with your choice of fresh pasta.  I chose the casarecce pasta, which are small twists.  The pasta is excellent.  It is perfectly cooked with a rich flavor you only get from fresh pasta.  The lemon basil sauce has a perfect citrusy, herbed flavor with a velvety and light texture.  It coats all of the pasta and compliments every ingredient.  The asparagus and broccolini add earthy flavor and a subtle crunch.  The shallots balance out the dish with their savory, sweet flavor.  The Castelvetrano olives impart amazing salty and slightly tangy flavor with their unique, meaty texture.  This pasta had everything:  delicious pasta, sauce, and toppings!  It is exactly what I want in a light, meatless pasta dish.
